I love to cook, but don't practice as often as I'd like. Thanksgiving was my last big adventure, with butternut squash soup, sage stuffing, and spinach au gratin as first-time tries.
I know there's one gourmet chef and many other good cooks on the site.

Man, its nice to know I am not alone. Sure thing, what recipes do you want? I have tons of them. I actually am a photog too. I post what I make on my personal site. A lot of camping recipes and a lot of gourmet also. Blackwidow, I remember before we hit overseas, I was in MD for the Blizzard of 93? 94? Anyway, my neighbor was leaning out his door yelling "Its a blizzard Garth, go inside." I had the grill on, a homebrew in one hand, a cigar in the other. hahaha I was not going in until my ribs had gotten done. hahaha

April 21, 2005I cook every meal. I'm a nutrition educator, so I kinda have to act as a role model in my daily life - hence I gotta eat right at every meal. I like to cook for other people the best. I like to remind people that up until really recently we all cooked our own meals. Or got women to do it for us...
April 21, 2005I love to cook...that's why I became a Chef...it wasn't for the money that's for sure.
My son school had an auction to raise money so a friend of mine asked if I'd like help him out and donate my time and auction a BBQ dinner for 12 with him and few other friends. So myself and a good friend of mine (who is also a Chef) hopped on board and we ended up raising over $1200.00 for this auction. Since is went for such a high amount (twice as much as anything else auctioned) we decided to do a 5 course meal for them and pair each course with a wine.
The dinner is next month but here is the menu my buddy and I created:
First Course â€“
Pan Roasted Scallops & Tiger Prawns
Served on a bed of Brussel sprout leaves with Pancetta & a Blood Orange Glaze
Second Course â€“
Baby Spinach & Shaved Asparagus
Tossed in a smoked bacon Vinaigrette with Grilled Portabello Mushrooms and Cherry Tomatoes
Third Course â€“
Grilled Sonoma Quail
With Baby Mizuna, Spring Vegetable, Quinoa and Balsamic reduction
Intermezzo - Sorbet with Champagne
Fourth Course â€“
Grilled Rib Eye with a Shallot Demi
Served with Roasted Fingerling Potatoes & Spring Onions
Fifth Course â€“
Milk Chocolate CrÃ¨me BrulÃ¨e
Topped with Fresh Seasonal Fruit
Can't wait to do it....It's going to be blast.

April 21, 2005Charles, that looks fantastic. Just a suggestion, maybe add a sorbet in there. Looking like a ton of flavors going. Maybe a champange sorbet or a peach. I actually would add a nice peach soup with that too but that would mean you would probably want to zap a course. Perfection. What time should we all be there.

But I love to eat.
So I married a women who loves to cook, and damn can she cook.
I will cook while camping, that I don't mind. You don't mind eating your beans & corn from the can do you?
Seriously, if it don't fit in the Dutch Oven or on a grill I don't cook it.
