Outstanding Mikey! Here are the ones that folks sent me. We are looking good so far. I do the ribs too. I served it last time. I serve it on a bit of saute'd cabbage. Sounds kinda gross but it taste fantastic. Even my kids love it.
Broccoli Rice and Chicken
ยท 2 pounds chicken tenders or boneless chicken breasts cut in strips
ยท 1 1/4 cups uncooked converted rice
ยท 1 package Knorr's Cream of Broccoli Soup Mix
ยท 1 1/2 cups chicken broth
ยท pepper, to taste
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.
Pineapple Marinated Pork Chops Recipe
ยท 12 pork chops
ยท 2 can (40 ounces) pineapple chunks with juice
ยท 1/2 cup brown sugar
ยท 4 teaspoons soy sauce
Put pork chops in a plastic storage bag; mix remaining ingredients; pour over pork chops in bag. Seal bag and refrigerate overnight. Put in Crock Pot on low for 6 to 8 hours, or until done. These pork chops are also great on the grill.
Garth's Crockpot Lasagna
ยท 2 lb. lean ground beef (or replace premade meatballs
ยท 1/2 cup chopped onion
ยท 1 small clove garlic, minced
ยท 2 cans (15 ounces each) tomato sauce
ยท 1 can (6 ounces) tomato paste
ยท 1 to 1 1/2 teaspoon salt
ยท 1 teaspoon dried leaf oregano, crumbled
ยท 1/2 teaspoon dried leaf basil
ยท 12 oz. carton cottage cheese
ยท 1/4 to 1/2 cup grated Parmesan cheese
ยท 12 oz. lasagna noodles, uncooked, broken into small pieces
ยท 8 to 12 oz. shredded mozzarella cheese
Brown ground beef and onion in skillet; drain off excess fat. Add garlic, tomato sauce, tomato paste, salt and oregano and basil. Cook long enough to heat thoroughly.
Spoon a layer of meat sauce onto the bottom of the slow cooker. Add a double layer of broken lasagna noodles and top with a layer of the cheeses. Repeat with sauce, noodles and cheeses until all are used up.
Cover and cook on low for 6 to 8 hours. Serves 12.
Crockpot Turkey and Stuffing
ยท 2 package herb-seasoned stuffing mix, prepared
ยท Turkey Loin or 8-12 Turkey Breast
ยท 2 can cream of chicken soup
ยท 2 can (3 to 4 ounces or more) sliced mushrooms, drained
Prepare packaged stuffing mix with butter and liquid as directed on package. Layer stuffing in the bottom of greased slow cooker. Place the chicken pieces on top. Chicken can overlap some, but try to arrange with as little overlap as possible. If there is room, you could use more chicken. On top of the chicken, pour 1 can of cream of chicken soup, or you could use cream of mushroom, or cream of celery, whatever you like. Just don't add the liquid the soup can says to use. Add the mushrooms. Be sure to stir the mushrooms around a little so they are coated with the soup. Cover and cook on low for 6 to 8 hours.
Chicken and Tortilla Bake
ยท Meat from 1 whole chicken
ยท 1 can cream of chicken soup
ยท 1/2 cup green chili salsa
ยท 2 tablespoon quick cooking tapioca
ยท 1 medium onion, chopped
ยท 1 1/2 cup grated cheese (try Monterey Jack)
ยท 1 dozen corn tortillas
ยท Black olives
Tear chicken into bite size pieces, mix with soup, chili, salsa and tapioca. Line bottom of crock pot with 3 corn tortillas, torn into bite size pieces. Add 1/3 of the chicken mixture. Sprinkle with 1/3 of the onion and 1/3 of the grated cheese. Repeat layers of tortillas topped with chicken mixture, onions and cheese. Cover and cook on low 6 to 8 hours.
Garnish with sliced black olives.
